Red Beans and Rice

A great Louisiana dish with chicken sausage!

Ingredients

  • 2 16 oz cans light kidney beans, drained and rinsed
  • 1/2 lb smoked chicken or italian sausage(Aidells), thinly sliced
  • 3 celery ribs, chopped
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • garlic
  • 2 tsp creole seasoning
  • 3 cups long grain rice

Preparation

Step 1

Saute sausage and garlic until sausage is browned. Add celery, green pepper, and onion over medium high heat 10 minutes.Add beans, creole seasoning, and 1-1 1/2 cups chicken broth. Bring to boil, reduce heat to low, and simmer 20-30 minutes. Serve with rice.
