Classic Lemon Bars

Ingredients

  • FILLING:
  • 1/2 cup butter or margarine, softened
  • 1/4 cup sugar
  • 1 cup all-purpose flour
  • 2 eggs
  • 3/4 cup sugar
  • 3 Tbsp. lemon juice
  • 2 Tbsp. all-purpose flour
  • 1/4 tsp. baking powder
  • confectioners' sugar

Preparation

Step 1

In a small mixing bowl, cream the butter and sugar; gradually add the flour. Press into an ungreased 8-inch square baking dish. Bake at 375 for 12 mins. Cool slightly.

Meanwhile, in another mixing bowl, beat the eggs, sugar, lemon juice, flour and baking powder until frothy. Pour over warm crust. Bake for 15-20 mins. or until lightly browned. Cool on a wire rack. Dust with confectioners' sugar. Cut into bars.
