Surprise Cupcakes

Ingredients

  • Batter:
  • 3 cups flour
  • 2 cups sugar
  • 1/2 cup cocoa
  • 1 tsp salt
  • 2/3 cup salad oil (or olive oil)
  • 2 tsp baking soda
  • 2 cups water
  • 2 Tbsp vinegar
  • 2 tsp vanilla
  • Filling:
  • 8 oz. cream cheese, softened
  • 1 egg
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 6 oz. chocolate chips

Preparation

Step 1

Combine filling ingredients except for chocolate chips. Beat until smooth and add chips. Set aside.

Sift together all dry ingredients and add remaining ingredients. Mix until smooth.

Fill lined cupcake pans 2/3 full. Top with heaping tsp of filling. Bake at 350 degrees for about 25 minutes. No frosting required.
