Ingredients
- 1 cup yellow corn meal
- 1/2 cup oil
- 2 eggs
- 1 cup buttermilk
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 small can green chilies
- 2 cans creamed corn
- 1 medium onion, sliced
- 1 green pepper, chopped
- 1/2 cup Parmesan cheese
Preparation
Step 1
Mix all ingredients together, except for the peppers and cheese.
Pour one-half of the mixture into a 9” skillet.
Sprinkle cheese and peppers over top.
Add rest of mixture.
Add remaining cheese and peppers.
Bake at 350 degrees for 45 minutes
