There’s something truly magical about…fat. Yep, that’s right. You’d never guess that something as simple as a pork butt roast could be so, so delicious. In fact, it’s one of my favorite cuts of meat. Pulled pork, anyone?
I hope you’re hungry! Well, not too hungry, because despite the fact that we purchased a 2.5 pound roast for just two people, there isn’t much left!
Why? Because we slow cooked the meat, then lathered it with this amazing homemade cola barbecue sauce (and added a tablespoon of liquid smoke, because I miss summer bbqs that much ;)! I halved the recipe, but it was the perfect amount for the size roast we had.
After slow cooking the roast for 3.5 to 4 hours at around 315, and breaking it apart with a fork, I covered it in barbecue sauce and then threw it back in the oven for 15 minutes at about 420, to lock in all the flavor.
