Cream of Mushroom Soup

Ingredients

  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 6 cups sliced fresh mushrooms
  • 3/4 cup flour
  • 4 (14.5 oz cans) chicken broth
  • 2 cups half and half
  • 1 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

In a large saucepan, saute onion in butter until tender. Add mushrooms and saute until tender. Add mushrooms and saute until tender. Combine flour and broth until smooth; stir into the mushroom mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in cream, salt, pepper. Simmer, uncovered for 15 minutes. Stirring often.
