Sour Cream Ganache

Sour cream in place of heavy cream makes a smooth and lilting frosting with excellent piping consistency. This easy-to-make ganache has a unique tanginess which I find delicious with any chocolate layer cake. It is especially good with Cordon Rose Banana cake

Ingredients
- 12 ounces bittersweet chocolate
- 1 2/3 cups sour cream (14 ounces)
Preparation
Step 1
In a double boiler set over hot water or in a microwave on high power, stirring every 10 seconds, melt the chocolate. Remove from the heat and add the sour cream. Stir with a rubber spatula until uniform in color. If the pan feels warm, transfer to a bowl.
Use at once or store, and when ready to use soften by placing the bowl in a hot water bath or microwave for a few seconds, stirring gently.
