Ingredients

  • 2 sticks (1 cup) of butter (room temperature)
  • 1 (8 ounce) package of cream cheese (room temperature)
  • 1 teaspoon of vanilla extract
  • 1 cup of white sugar
  • 1 cup of brown sugar
  • 2 cups of self-rising flour (sifted)
  • 1 whole egg (room temperature)
  • 1 pinch of salt
  • 1 cup of chopped pecans

Step 1


Mix the butter & cream cheese together in a large mixing bowl. Beat the egg in a cup until frothy and then pour it into the cream cheese & butter mixture. Blend well. Next, add the flour gradually as you mix. Then, stir in the remaining ingredients and mix well, breaking up all the lumps. This cookie mixture should be thick. Now, use a tablespoon and drop the dough on the ungreased cookie sheet about 2 inches apart. (Depending on how much you drop on cookie sheet, you should yield approximately 3 ½ to 4 dozen cookies.)
Bake 12 – 13 minutes at 375 degrees. Remove cookies from the oven and let cool on cookie sheet for 5 minutes. Then, use spatula and move each cookie to a cooling rack to continue cooling.
