  • 12 large sweet potatoes
  • 1 c sugar
  • 1 c brown sugar
  • 1/2 c butter (1 stick)
  • 1 t vanilla

Preparation

Step 1

Heat oven 350
Peel potatoes and quarter lengthwise equally. Place in a large pot and cover with cold water. Bring to boil and boil for 1 min. Immediately remove from heat and drain.
Stir together sugars with 1/4c water in sauce pan. Bring to boil, stirring frequently, until the sugar begins to crystalize on the sides of the pan. Remove from heat, add butter and vanilla and sir until blended.
Layer the sweet potatoes in large casserole and pour syrup over, scraping the sides of the saucepan to free the crystalized sugar. Bake, covered with foil, basting occasionally, until tender and all the syrup has bee absorbed.
