Ingredients
- Sauce:
- 4 lbs pork side spareribs
- 2/3 cup hoisin sauce
- 1/3 cup plum sauce
- 1/4 cup oyster sauce
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tbsp minced ginger root
- 3 cloves minced garlic
- 2 tbsp sesame oil
- 2 tbsp dry sherry
- 2 tbsp cider vinegar
- 1 tsp chili paste

Step 1
1. Trim any visible fat from ribs. If necessary remove membrane from the underside. Cut into 1 -rib pices and place in large pot. Cover with water and bring to a boil, skimming off foam. Reduce heat, cover and simmer until tender aabout 45 minutes. Drain well: arrange in large glass dish.
2. Sauce: In bowl whisk together hoisin, plum, oyster and soy sauces, honey, ginger garlic, sesame oil, sherry, vinegar, and chili paste. Pour 1 1/3 cups over ribs, turning to coat well. Cover and refrigerate remaining sauce. Cover ribs and refrigerate, turning occasionally for 4 hours. (refrigerate for up to 24 hours)
3. Place ribs on greased grill over medium-high heat; close lid and grill, turning twice and brushing generously with reserved sauce, until browned and glossy, 10-15 minutes.
