Baked Turkey and Ziti Casserole

Give this hearty, satisfying casserole a Tex-Mex flavor by adding canned green chiles and chili powder to the meat mixturea nd stirring in reduced-fat cheddar instead of the mozzarella cheese.
Once cooked, this dish freezes beautifully. If you have leftovers, wrap in individual portions and pop in the freezer. Thn reheat in the microwave.

Ingredients
- 12 oz ziti or penne
- 2 tsp canola oil
- 1 # ground skinless turkey breast
- 1 onion, chopped
- 1 green bell pepper, seeded and chopped
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1 (24 oz) jar marinara sauce
- 1 c. part-skim ricotta cheese
- 1 c. shredded and part-skim mozzarella cheese
Preparation
Step 1
Cook the ziti according to package directions, then drain and set aside. Preheat the oven to 375.
Meanwhile, heat the oil in a large nonstick skillet, then add the turkey, onion, bell pepper, salt and ground pepper. Cook, stirring often, until all pan juices evaporate and the turkey is browned, about 10 mintues.
Stir in the ziti, marinara sauce and ricotta. Spoon the mixture into a large nonstick baking pan. Top with the mozzarella cheese. Bake, uncovered, until the filling is hot and the cheese is melted, 40-50 minutes.
