Chocolate Orange Mousse Crepe filling

  • 1 t grated orange rind
  • 1/4 cup packed brown sugar
  • 2 egg yolks
  • 2 eggs
  • 6 ounces semi sweet chocolate melted and cooled
  • 1 T orange juice
  • 1 cup whipping cream, whipped
  • addtl whipped cream and mandarin oranges for garnish



Step 1

Combine first four ingredients in blender (or beat at high speed) and process until frothy. Add chocolate and juice. Process or beat in well. Fold the whipped cream into the chocolate mixture Also remember, despite what recipe says, always fold heavy texture into light. Chill until set in one large bowl or six individual bowls.
