THAI SHRIMP PHYLLO HORS D’OEUVRES

Ingredients
- 1 T vegetable oil
- 1/2 cup each chopped green pepper, onion & celery
- 2 cloves garlic, minced
- 1/4 cup fish sauce
- 1/2 tsp. Hot pepper sauce
- 1/4 tsp. Thyme
- pepper
- 1 lb. shelled cooked shrimp
- 1/4 c. chopped cilantro
- 2 T. lime juice
- phyllo (1 pkg.)
- 3/4 c. melted butter

Preparation
Step 1
In medium saucepan, heat oil; cook green pepper, celery, onion & garlic over medium heat, stirring often, 5 min. or until softened. Stir in fish sauce, hot pepper sauce & thyme; cook 3 min. Remove from heat; stir in pepper to taste. Let cool completely.
Chop shrimp very finely; add to vegetable mixture, along with coriander & lime juice. Set aside.
Working with phyllo, form triangles or rolls, using approx 2 tsp. Shrimp mixture per shape. For triangles, cut phyllo into 4 lengthwise. For rolls, cut each sheet into 4 crosswise.
Bake at 350F until golden brown, about 10-12 minutes. Can be made ahead and frozen unbaked.
