You’ll get a slightly whiter cake if you use shortening instead of butter. I prefer butter.

Ingredients
- 4 egg whites
- 2 cups cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup butter softened
- 1 3/4 cups sugar
- 1 teaspoon vanilla
- 1 1/3 cups buttermilk

Preparation
Step 1
Allow egg whites to stand at room temperature for 30 minutes.
Meanwhile grease and flour two 9 inch round cake pans or grease one 13 by 9 baking pan.
In a medium bowl stir together flour, baking powder, baking soda and salt.
In a large mixing bowl beat butter with sugar and vanilla.
Add egg whites. Add flour mixture with buttermilk.
Spread batter into prepared pans.
Bake in 350° for 28 minutes
