Ingredients
- 2 T low salt soy sauce
- 2 T rice vinegar
- 2 T dry sherry
- 1 T chopped fresh ginger (or 1 t ground ginger)
- 2 medium garlic cloves. crushed
- 3/4 pound boneless, skinless chicken breast, cut into 1/2 inch pieces
- 2 t toasted sesame oil
- 1/4 cup cashews
- 1/2 medium red onion, sliced (1 cup)
- 1 medium red bell pepper, sliced
- 2 t corn starch
- salt and black pepper
- 2 scallions, sliced

Step 1
Mix soy sauce, vinegar, sherry, ginger, and garlic in a small bowl. Add chicken and set aside.
Heat a wok or skillet over high heat and add sesame oil. Drain chicken, reserving. liquid. Add chicken and cashews to skillet; stir-fry 2 minutes and remove to a plate. Stir-fry onion and red bell pepper 2 minutes. Mix cornstarch with 1 tablespoon water and add to reserved marinade. Add marinade, chicken and cashews to the skillet; stir-fry 2 minutes. Remove from heat. Add salt and pepper to taste. Top with scallions and serve with rice.
