Boursin Creamed Spinach

Ingredients
- 1/2 cup diced yellow onion
- 1 tbsp unsalted butter
- 2 tbsp flour
- 1 cup milk ( 1% works well)
- 1/2 cup heavy cream
- 1 pkg (5.2oz) Boursin cheese
- 1 pkg ( 10oz) frozen chopped spinach, thawed and squeezed dry of excess moisture (Gillens Popeye chopped spinach 12 oz steam supreme works the best. I steamed the spinach first)
- 2 tbsp grated Parmesan cheese
- 1 tsp minced lemon zest
- Salt, White pepper, cayenne and nutmeg to taste
- Crumb topping-
- 2/3 cup coarse fresh bread crumbs ( 2 slices white or whole grain bread)
- 1 tbsp unsalted butter, melted
- 1 tbsp olive oil
- Salt and Black pepper to taste

Preparation
Step 1
!. Preheat oven to 425, coat a shallow 2 qt baking dish with non stick spray and set aside
2. Saute onion in 1 tbsp butter in a sauce pan over medium heat. Cook until onion is softy ( 5 minutes)
Add flour and stir to coat onion. Cook about 1 minute
3.Gradually whisk milk and cream into onion mixture, stirring constantly to prevent lumps, simmer sauce for one minute
4. Stir in Boursin cheese a little at a time until cheese is melted and smooth. Remove saucepan from heat
5.Add spinach, parmesan cheese, lemon zest and seasonings to taste. Transfer spinach mixture to baking dish
6. Combine crumbs, 1 tbsp butter, olive oil, salt and pepper. Top spinach with crumbs, pressing them to adhere.( Dish can be made ahead-cover and chill)
7. Bake at 425 until crumbs are golden and sauce is bubbly ( 20 -25 minutes)
