Ingredients
- 8 medium potatoes
- 1 small onion, chopped
- 4 tbsp salad oil
- 2 tbsp cider vinegar
- 2 tbsp milk
- 1/2 tsp dry mustard
- 1-1/2 tsp salt
- 1/8 tsp pepper
- 3 boiled eggs, chopped
- 1/2 cup mayonnaise
Preparation
Step 1
Cook potatoes until tender. Drain, cool and peel. Cut into cubes. Sprinkle onion on top. Mix salad oil, vinegar and seasonings. Pour over warm potato mixture. Toss lightly. Add chopped eggs. Thin mayonnaise with milk. Pour over potatoes. Toss gently and chill.
