Ingredients
- 2 eggs
- 1/2 cup chopped fresh spinach leaves
- 1/2 red bell pepper, roasted
- 1 oz. mozzarella cheese, part skim (shredded)
- salt and pepper to taste 1 10-inch whole wheat tortilla
Preparation
Step 1
Scramble the eggs in pan. When they're almost done, add spinach bell pepper, and cheese. Season with salt and pepper. When the cheese has melted, wrap in a burrito.
