Bread, Zucchini and Gruyere Fritters with Chive Horseradish Cream

Ingredients

  • 1 1/2 cups self-rising cornmeal mix
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup wole buttermilk
  • 2 large eggs, lightly beaten
  • 1 cup grated fresh zucchini
  • 1 up shredded Gruyere cheese
  • 1/4 cup chopped green onion
  • Vegetable oil for frying

Preparation

Step 1

In a large bowl, combine cornmeal, flour and salt.

In a small bowl, combine buttermilk and eggs; add to cornmeal mixture, stirrng to combine. Stir in zucchini, cheese and green onion.

In a large Dutch oven, pour oil to a depth of 3 inches. Heat oil, over medium-high heat to 350 degrees F.
Drop batter by tablespoonfuls into hot oil. Fry, 3 to 4 minutes, or until golden brown. Drain on paper towels. Serve wtih Chive Horseradish Cream.

Chive Horseradish Cream
Makes about 1 cup
1/2 cup sour cram
1/2 cup mayonnaise
1/4 cup chopped fresh chives
2 tablespoons prepared horseradish
1 tablespoon fresh lemon juice
1/4 teaspoon ground black pepper

In a small bowl, combine all ingredients. Cover and chill.
