Doughnut Balls *(GOOD)*

Ingredients

  • 2 cups Multi-Purpose Mix (recipe follows)
  • 3/4 cup sugar, divided
  • 1 1/4 teaspoons cinnamon, divided
  • 1/2 teaspoon nutmeg
  • 2 eggs, slightly beaten
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • Oil for deep-fat frying

Preparation

Step 1

In medium bowl combine mix, 1/4 cup sugar, 1/2 teaspoon cinnamon and the nutmeg. Add eggs, milk and vanilla; stir until well blended. In fryer heat oil to 400 degrees. Drop batter by rounded teaspoonfuls into oil (dip spoon into hot oil to prevent sticking). Fry 3 minutes or until brown. Drain on paper towels. In small bag combine remaining 3/4 teaspoon cinnamon, 1/2 cup of sugar. Add hot doughnuts and shake until evenly coated. Makes 30.

*Multi-Purpose Mix:*
10 cups all-purpose flour
½ cup sugar
⅓ cup baking powder
1 tablespoon salt
2 cup vegetable shortening

In large pot or bowl combine flour, sugar, baking powder and salt; mix well. With pastry blender or 2 knives cut shortening in flour mixture until mixture resembles coarse crumbs. Store in air-tight cool dry place. Use within 3 months. Makes 13 cups.

For Whole Wheat Multi-Purpose mix substitute 5 cups whole wheat for 5 cups all-purpose flour.
