Ingredients

  • 4 eggs
  • 2 C sugar
  • 1 can (16 oz) pumpkin
  • 1-1/2 C vegetable oil
  • 3 C all purpose flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 2 C (12 oz) semisweet chocolate chips

Preparation

Step 1

1. In a large mixing bowl, beat eggs, sugar, pumpkin and oil until smooth.
2. Combine flour, baking soda, baking powder, cinnamon and salt; add to pumpkin mixture and mix well.
3. Fold in chocolate chips. Fill greased or paper-lined muffin cups 3/4 full. Bake at 400 for 16-20 miuntes or until muffins test done. Cool in pan 10 minutes before removing.
