Onion & Goat Cheese Tartlets

Ingredients

  • 2 frozen puff pastry sheets defrosted
  • 1 T.butter
  • 1 T.evoo
  • 1/4 c. finely sliced red onion
  • 1/4 c. finely sliced onion
  • 2 scallions finely sliced
  • 1 T. finely chopped chives
  • 1 egg
  • 1/3 c. heavy cream
  • 1 t. salt
  • 3 oz. goat cheese

Preparation

Step 1

Preheat oven to 375 degrees
Take a 2 1/2" round cookie cutter & cut out 12 round from 2 sheets of puff pastry.
Take a 12 hole mini muffin pan & place rounds of dough into each hole,pressing gently to form a cup and giving room for the filling. Cover with plastic wrap and keep the prepared pan in the refrigerator or freezer (depending how long until you need it)
In a skillet add butter and oil. Add onions & cook gently till soft & caramelized, stirring frequently for about 15-20 min. Once cooked add the scallions & chives. Set aside to cool slightly.
In a bowl whisk together egg, cream & salt. Add cooked onions to custard, stirring thoroughly. Pour into prepared pasty cups with a spoon. Break up the goat cheese and place on top of tarts.
Bake for 20-25 min. Serve
