  • 3 C flour
  • 2 t cinnamon
  • 1 t baking soda
  • 1/2 t baking powder
  • 1/2 t salt
  • 1/2 C vegetable oil
  • 2 C sugar
  • 2 eggs - beaten
  • 1/2 t vanilla
  • 2 C apples peeled, cored, and coarsely chopped
  • 1 C broken or chopped walnuts

Step 1

Preheat oven to 350 and grease 2 loaf pans.

Combine flour, cinnamon, baking soda, baking powder and salt.

In separate bowl combine oil, sugar, eggs, vanilla and apples.

Stir the wet mixture into the dry one.

Divide between the two prepared pans and bake for 40-45 minutes or until a tooth pick inserted comes out clean.

Cool slightly in the pan then loosen edges with a butter knife and turn out on to a wire rack to complete cooling.
