Pumpkin Loaves


A wonderful pumpkin bread but it is also a lovely cake when frosted with cream cheese frosting. From my friend Tasha Parker

  • 2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 2 cups canned pumpkin
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

Cooking time 75mins


Step 1

1. Grease 2 loaf pans, heat oven to 325 degrees.
2. Beat sugar with oil and eggs one at a time. Beat until light and fluffy, then add pumpkin.
3. Sift together flour, salt, baking powder, and spices. Add this to the batter. Mix just until incorporated.
4. Put batter in 2 loaf pans, bake 60 minutes. Cool 10 minutes on wire rack, then remove from pan.
