Spinach Stuffing Balls

  • 6 eggs, lightly beaten
  • 1 pkg. (6oz) stuffing mix
  • 1/2 cup butter or marg., melted
  • 1 cup grated parmesan cheese
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 pkgs. (10oz each) frozen chopped spinach, thawed and squeezed dry


Servings 4


Step 1

In a bowl, combine eggs, stuffing mix, butter, parmesan cheese, salt and pepper. Add spinach; mix well. Shape into 1 1/2" balls; place on ungreased 15x10x1" baking pan. Bake at 350 for 12-15 mins. or until lightly browned.
