Easy Vegetarian Chili on Rice

Ingredients

  • 1 tbs vegetable oil
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 celery stalk, chopped
  • 1 jalapeno pepper, chopped
  • 1 (28 oz) can petite diced tomatoes
  • 1 garlic clove, minced
  • 1/2 green pepper, diced
  • pinch of parsley
  • 2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • salt
  • 1 small zucchini, diced
  • 1 can red kidney beans, undrained

Preparation

Step 1

Cook oil, onion, carrot, celery and jalapeno pepper for 6 minutes, stirring constantly
Add rest of the ingredients. Bring to a boil, cook until beans and vegetables are tender
