Ingredients
- 2 -3 lbs plums
- 4-6 medium potatoes
- 3 eggs
- Dash of salt
- sugar cubes
Preparation
Step 1
Boil potatoes with skins on. Peel and mash. Beat eggs one at a time. Add a dash of salt.
Dough is very sticky. Add flour until you have a soft dough. (You will add a lot of flour)
Flour counter and roll dough to 1/4 inch thickness - cut into strips.
Put one plum with a sugar cube and seal dough around it.
Boil water, add salt, add dumplings one at a time. Stir with a wooden spoon once or twice. Cook for 30 minutes on low. Drain. Be careful so dumplings don't fall apart.
To freeze: flash freeze - place uncooked dumplings on a cookie sheet and place in freezer until frozen. Place dumplings in freezer bags. When ready to cook, just put the bags in the boiling water.
Topping:
Brown a small piece of onion in 1 tbs oil. Remove onion pieces and add 4-5 tbs sour cream. Boil for 1-2 minutes. pour over dumplings.
