Heirloom Tomatoes and Mozzarella Salad

Ingredients

  • 6 ripe heirloom tomatoes (about 2 1/2 pounds), coarsely chopped
  • 2 Tbsp aged balsamic vinager
  • 1/2 cup torn fresh basil
  • 2 Tbsp extra virgin olive oil
  • 12 ounces fresh buffalo mozzarella cheese
  • fresh basil sprigs for garnish
  • salt and freshly ground black pepper

Preparation

Step 1

Gently toss tomatoes with 1 Tbsp vinegar

Add torn basil and 1 Tbsp olive oil. Sprinkle with salt and pepper; toss again.

Mound the tomatoes in the center of 4 salad plates. Tear the mozzarella into small chunks and place over the tomatoes, dividing evenly. Sprinkle with salt and pepper. Drizzle with remaining olive oil.

Garnish the salads with basil sprigs and drizzle with remaining 1 Tbsp vinager.

Serve immediately.
