Creamed Spinach

  • 2 (10 oz) packages frozen spinach
  • 2 tbs minced shallots
  • 2 tsp all purpose flour
  • 1/8 tsp salt
  • 1/8 tsp ground nutmeg
  • 1/2 cup fat free milk
  • 1/2 cub tub style light cream cheese, softened


Servings 4


Step 1

1. Defrost and drain spinach well.

2. Place pan coated with cooking spray over medium heat until hot. Add shallots and saute 2 mins. Combine flour, salt and nutmeg; add to pan stirring well; cook 30 seconds. Add milk and cheese stirring with whisk; cook 1 min til thick; add spinach; cook 30 seconds until thoroughly heated.
