90 Calorie Chocolate Cupcakes

Ingredients

  • 1/4 C + 2 Tbsp
  • Cocoa Powder
  • 1/2 C Hot Water
  • 3/4 C Splenda
  • 2 Tbsp Brown Sugar
  • 1/3 C Low Fat Milk
  • 1.1 /2 tsp Vanilla extract
  • 1 Egg
  • 1/2 C Light Mayonnaise
  • 1 C Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda

Preparation

Step 1

Bake 325º 12 cup muffin pan

Preheat oven. Line 12 muffin cups
with liners; coat with cooking spray.
Place cocoa in large bowl.
Add hot water; whisk until smooth.
Whisk in Splenda until smooth,
then add brown sugar, milk, vanilla,
egg and mayonnaise and whisk until
smooth. Gradually SIFT in flour,
baking powder and baking soda;
stir until well mixed.
Scoop 1/4 cup batter into each
muffin cup. Bake 13 minutes or
until toothpick comes out clean.
