Mushrooms Stuffed with Crabmeat and Garlic Cream Cheese

Ingredients

  • 2 1/2 lbs. large mushrooms
  • 1 lb. crabmeat
  • 1 lb. cream chesse, softened
  • 1 cup finely crushed garlic croutons
  • 1/2 large onion, chopped
  • Parmesan cheese, grated
  • paprika

Step 1

Clean mushrooms and remove stems. Chop stems fine. In medium pan, melt about 2 Tbs. butter; add chopped stems and onions, pepper generously. Saute until onions are translucent.

Mix cream cheese with mushrooms and onions, add finely crushed croutons. Add crabmeat and toss lightly trying not to break up the crabmeat.

Brush mushroom caps with olive oil, mound mixture into mushroom caps. Sprinkle tops generously with Parmesan cheese and lightly with paprika.

Broil until piping hot.
