Broccoli Pie

Great recipe from my wonderful sister-in-law Joyce.

Original recipe called for some salt but I found it made the dish too salty because the ham was already salty.

Ingredients

  • 1 baked 9-inch pie shell
  • 2 cups diced cooked ham (1 ham steak)
  • 1 10.8 oz bag frozen broccoli, cooked
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese
  • Sauce
  • 3 tablespoons butter
  • 1 tablespoon cornstarch
  • 1/8 teaspoon ground white pepper
  • 1 cup milk
  • 1/4 cup mayonnaise

Preparation

Step 1

Melt butter in a 2-quart saucepan over medium heat. Stir in cornstarch and the pepper. Remove from heat.

Gradually stir in milk, mixing until smooth.

Cook over medium heat, stirring constantly, until sauce comes to a boil and boils for 1 minute.

Stir small amount of cornstarch mixture into mayonnaise, then stir into mixture in saucepan.
Add ham; cook over low heat about 5 minutes or until ham is heated.

Toss broccoli with lemon juice.

Line pie shell with broccoli. Cover with the ham mixture. Sprinkle with grated cheese.

Broil on low on top rack for about 5 minutes, or until lightly browned.
