Chicken Cacciatore

Ingredients

  • 4-5 boneless chicken breast halves, cut into 1/4-1/2 inch strips)
  • 2-3 tbs olive oil
  • 3/4 cup chopped onions
  • sliced mushrooms
  • 1 tbs minced garlic
  • 1 (14 oz) can crushed tomatoes
  • 3-4 bay leaves
  • 2 tsp Worcestershire sauce
  • 1 cup white wine
  • 1 tbs cornstarch
  • 3 tbs water

Preparation

Step 1

Heat oil on medium heat. Add onions and mushrooms. Saute with lid on skillet for about 3-4 minutes, stir frequently. Add garlic, chicken, tomatoes and wine, Worcestershire sauce and bay leaves. Raise heat to high and cook covered stirring occasionally for about 10 minutes or until chicken is no longer pink.

Mix cornstarch and water in small container with a lid. Shake well. Add to sauce mixture stirring constantly until sauce is thickened. Season with black pepper to taste. Serve over noodles or spaghetti.
