Cranberry White Chocolate Scones

Ingredients

  • 2 3/4 cups flour
  • 1/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1 t. baking soda
  • 1/2 teaspoon salt
  • 8 tablespoons chilled unsalted butter, cut into pieces
  • 6 tablespoons half-and-half
  • 1/2 cup dried cranberries (craisins)
  • 1/2 cup white chocolate chips
  • white sugar crystals (optional)

Preparation

Step 1

Preheat oven to 350 degrees. In a food processor blend together the flour, sugar, baking powder, baking soda and salt. Add the butter. Add the half and half and pulse until combined. Add cranberries and the white chocolate chips, and pulse quickly until the dough holds together.
Turn out onto a lightly floured board. Cut with a biscuit cutter into 8 pieces. Spray a baking sheet with vegetable oil, then transfer the pieces to the sheet. Bake the scones at 350 degrees F for 14 minutes or until golden brown.

Melt canned white icing and sprinkle over top if desired.
