Artichoke Nibbles


Rich, quiche-like appetizer

  • 2 - 6 oz jars marinated artichoke hearts, chopped
  • 1 sm onion, finely minced
  • 4 eggs
  • 1/4 cup bread crumbs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tso oregano
  • 1/4 tsp Tabasco sauce
  • 8 oz sharp cheddar cheese, grated
  • 2 tbsp fresh chopped parsley

Step 1

Drain oil from 1 jar of artichokes into small frying pan. Drain oil from other jar and throw away. Sauté onion and garlic in frying pan. Beat eggs, bread crumbs, salt pepper, oregano, and Tabasco. Mix in cheese, chopped artichoke hearts, onions and parsley.

Pour into greased 9 X 9 pan. Bake at 325 degrees for 30 minutes. Cut into small squares, serve hot.
