Penne Pomodoro

Ingredients

  • 16 oz Penne Rigate
  • 1/4 cup olive oil
  • 2 1/2 cups diced tomatoes
  • 1/2 cup fresh chopped basil or 2 tsp dried basil
  • 2 tsp minced garlic or 1/2 tsp garlic powder
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese

Preparation

Step 1

Cook Penne according to package directions.

Drain, cover and set aside.

Heat olive oil in large skillet.

Add tomatoes, basil, garlic and chicken broth; simmer for 2 minutes.

Toss hot pasta with sauce;mix well.

Salt and pepper to taste.

Sprinkle with Parmesan cheese and serve.
