Vegetarian Cuban Black Beans and Rice (Peaches)

Ingredients

  • 1 cup long grain white rice
  • 1 tbs olive oil
  • 1 onion, chopped
  • 1 bell pepper, cut into 1/4 inch pieces
  • 2 cloves garlic, chopped
  • kosher salt and pepper
  • 1 tsp ground cumin
  • 2 (15.5 oz cans) black beans, rinsed
  • 1 tsp dried oregano
  • 1 tbs red wine vinegar
  • 1/4 cup fresh cilantro (optional)

Preparation

Step 1

1. Cook rice according to package

2. Heat oil in large sauce pan over medium-high heat

3. Add onion, bell pepper, garlic, 1 tsp salt, 1/4 tsp pepper and cook, stirring occasionally until softened. About 5-7 minutes.

4. Stir in cumin and cook for 1 minute

5. Add beans, oregano and 1 cup water.

6. Simmer covered for 10 minutes.

7. Add the vinegar and smash some beans with the back of a fork

8. Serve over rice
