Ingredients
- 1 leek or onion
- 6 brown mushrooms (optional)
- 1 red pepper
- 300 g tofu (the medium firm one)
- 1 tsp turmeric
- 1 large tsp minced garlic
- 1 tbsp nutritional yeast
- 2 tsp soy sauce
- tabasco (or pepper)
- olive oil
- 2 tsp kala namak salt (black salt)
- 2 handfuls of spinach
Preparation
Step 1
Slice the leak or onion, chop the mushrooms and fry them in a pan with a bit of oil. In the meantime finely chop the red pepper and add to the pan as well. Take 300g of tofu and finely crumble with your hands and add to the pan as well. Add the turmeric, garlic, nutritional yeast, soy sauce, a few drops of tabasco (or if you don't have pepper), kala namak salt and another 1 tsp of olive oil. Finally add 2 handfuls of spinach and combine with the scramble. Serve with a fresh salad, avocado and bread with hummus. then seize the day!
