Ingredients

  • 2 T. Butter
  • 1/4 cup flour
  • 1 1/2 cups milk (whole or 2%)
  • 1/2 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 can Cream of Chicken soup
  • 2 cups cut up chicken (Deli Style Rotisserie is best, but grilled, baked or poached breasts also work fine)
  • 1 1/2 cups cooked thin spaghetti (about 1/2 box)
  • 1 sleeve Ritz crackers (crushed and browned in skillet with butter)

Step 1

Make a white sauce by melting the butter in a medium saucepan. Add the flour and stir until golden. Pour in the milk stirring until sauce thickens. Add the cheese, sour cream, soup and chicken and stir until mixed well.

Cook spaghetti according to package directions and drain. Place in a buttered casserole dish and pour chicken mixture over the top. Crumble browned Ritz (or buttery type) cracker crumbs and ½ cup parmesan cheese and sprinkle over top of casserole.

Cover with foil and bake at 300 degrees for 45 minutes. Remove foil and bake an additional 10 minutes to brown the top.

Optional: Add mushrooms sautéed in butter and 2 T. white wine to the chicken mixture before pouring it over the pasta.
