Butterscotch Pudding Cake

Ingredients

  • Topping:
  • 1 C flour
  • 1 pkg (3 oz) cook and serve butterscotch pudding mix
  • 1/3 C sugar
  • 2 t baking powder
  • 1/4 t salt
  • 3/4 C milk
  • 2 T canola oil
  • 1 T vanilla
  • 1/2 C butterscotch chips
  • 3 T butterscotch sauce
  • 1/2 C sugar
  • 1/13 C boiling water
  • whipped cream optional

Preparation

Step 1

1. Coat slow cooker with nonstick spray
2. Whisk flour, pudding mix, sugar,baking powder and salt. Make well in center and add milk, canola oil and vanilla. Gently stir until batter is smooth. Stir in butterscotch chips. Pour evenly into slow cooker bowl.

3. Topping: Stir butterscotch sauce and sugar together in bowl. Pour in 1 1/3 C boiling water and stir til smooth. Pour over batter in slow cooker. Cover and cook on high for about 2 1/2 hours or until cake is puffed and top layer is set. Let stand, uncovered, 30 minutes before serving. Serve with whipped cream if desired.
