Ingredients
- 1/2 cup hot water
- 1 cup 100% Bran Cereal
- 1/2 cup rolled oats
- 1/2 cup chopped dates or raisins
- 1 cup buttermilk or non fat yogurt
- 1/4 cup oil
- 1 egg, slightly beaten
- 3 Tablespoons sugar or honey
- 1 1/4 cups whole wheat flour
- 1 tsp soda
- 1/2 tsp salt
Preparation
Step 1
Pour water over cereal, oats and dates. Let stand. Combine buttermilk, oil, egg and sugar. Stir into bran mixture. Add mixed dry ingredients and stir just until blended. Fill muffin pan 2/3 full. Bake at 400 degrees for 12-14 minutes.
