Ingredients
- sauce:
- 4 Tablespoons olive oil
- 1 Tablespoon cumin
- 2 teaspoons paprika
- 2 teaspoons ginger
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 medium-sized sweet potatoes,
- thinly sliced ( 2 pounds or about 7 cups )
- 1/2 cup plain yogurt or light sour cream
- 2 Tablespoons chopped cilantro
- 2 Tablespoons minced pecans
- 2 teaspoons lime juice
- 1/2 teaspoon sea salt
- 1/2 teaspoon garlic powder

Step 1
Preheat oven to 400 degrees. Combine the olive oil, cumin, paprika, ginger, salt, and black pepper, then toss the sweet potatoes with this mixture. Arrange potatoes on an oiled rimmed baking sheet. Bake 15 minutes at 400 degrees. Meanwhile, make the dipping sauce by combining the yogurt or sour cream, cilantro, pecans, lime juice, sea salt, and garlic powder. Turn the potatoes, increase heat to 425 degrees, and bake another 15 minutes. Potatoes should be golden brown but not crisp.
