Loco Moco

The dish, Loco Moco, was born in the 1940’s as the configuration you see here- a scoop of rice topped with a hamburger patty, gravy and a fried egg. The dish is now very popular all around Hawaii and the Pacific islands and sometimes includes Hawaii’s favorite processed meat, Spam.
Ingredients
- 1 lb ground beef
- 1/4 cup very finely minced onion
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1/4 teaspoon light brown sugar
- black pepper to taste
- 2 cups leftover beef gravy, reheated
- OR
- 2 cups beef broth
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 2 tablespoons cornstarch dissolved in water
- 4 cups cooked white rice
- 4 large fried eggs
Preparation
Step 1
Combine the beef, onion, soy sauce, Worcestershire sauce, sugar and pepper and lightly mix. Don’t over mix or the burgers will become tough when cooked. Form into 4 patties.
Sear the patties on medium high heat on both sides till desired doneness. Drain off most of the grease.
Prepare the gravy by combining the broth, soy sauce, Worcestershire in the same pan the patties were fried scooping up any dark bits on the bottom of the pan and bring to a boil. Dissolve the cornstarch in a little water and add all at once, stirring to the pan and stir until the liquid comes back to the boil and thickens, Remove from the heat.
To serve the dish place a scoop of rice on a dinner plate, top with a hamburger patty, a fried egg and gravy over all. Serves 4.
