Ingredients
- 1 cup ricotta cheese
- 1/3 cup powdered sugar
- 1 to 2 teaspoons grated orange peel
- 2 tablespoons orange juice
- 1 1/2 teaspoons vanilla
- 1 tub (8 ounces) whipped topping, thawed
- 1/4 cup chopped dried apricots
- 1/4 cup semi-sweet real chocolate chips
- 1/4 cup raisins
- 10 thin crisp butter cookies, coarsely chopped (about 3/4 cup)
Preparation
Step 1
Mix cheese, sugar, orange peel, juice and vanilla in medium bowl. Gently stir in 2 cups of whipped topping.
Stir in apricots, chips and raisins. Layer cookies and whipped topping mixture alternately in 6 parfait glasses.
Refrigerate at least 1 our or until ready to serve. Garnish with remaining whipped topping.
