Lasagne Rolls

Ingredients
- 1 box Wavy Lasagne
- 1 jar Marinara Sauce
- 4 tbsp extra virgin olive oil
- 1 lb. ground beef
- 1 onion, small diced
- 2 zucchini, small diced
- 3 portabella mushrooms, small diced
- 1 lb. ricotta cheese
- 2 eggs
- 6 basil leaves
- 1 cup mozzarella, shredded
- salt and pepper to taste
Preparation
Step 1
Pre-heat oven to 375°F. Cook pasta according to directions. Drain & toss pasta with 1 tbsp olive oil & lay flat on sheet tray. In a skillet, sauté 1 lb. ground beef until fully cooked. Add Barilla Marinara sauce & 1/2 Cup water, then bring to a simmer. In another skillet, sauté onions in olive oil (3-4 mins), add vegetables & brown. Stir vegetables into the ricotta and fold in eggs & basil. Spread filling onto 16 Lasagne pieces & roll them up individually. In 13x9 pan, add 1 cup of meat sauce & spread evenly. Add Lasagne Rolls & cover with remaining sauce & cheese, then bake covered with foil (25 mins). Remove foil & let the cheese brown (5 mins). Remove from oven to rest 15 mins before serving.
