Sweet Potato and Pineapple Casserole

Ingredients

• 1 (3 lb.) whole sweet potatoes cooked
• 3 Tbs. brown sugar
• 1/2 tsp. salt
• 1/2 tsp. cinnamon
• 2 eggs, beaten
• 4 Tbs. melted butter
• 1-1/2 c. crushed pineapple
• mini marshmallows

Preparation

Step 1

Beat all together. Butter baking dish, place 1/2 of mixture in dish, dot with marshmallows then add remaining mixture. Add the rest of marshmallows on top.
Bake at 350 degrees for 40 minutes.
