Tilapia with Mango Strawberry Salsa

Ingredients

  • 1 Tablespoon olive oil
  • 16 ounces tilapia fillets
  • 1.5 Tablespoon blackening seasoning
  • 0.75 cups strawberries, finely chopped
  • 0.75 cups mango, finely chopped
  • 0.25 cups red onion, finely chopped
  • 0.25 fresh basil, finely chopped
  • 1 Tablespoon lemon juice
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Preparation

Step 1

Heat olive oil in a skillet on stovetop over medium heat. Cover each side of tilapia with blackening seasoning. Cook tilapia in skillet for 3 minutes on each side until cooked through. In a medium bowl while the tilapia is cooking, mix together strawberries, mango, red onion, basil, lemon juice, salt, and pepper. Remove tilapia from heat and top with mango strawberry salsa.
Freezing Directions:

Before cooking, place tilapia in a gallon freezer bag. In a bowl, combine strawberries, mango, onion, basil, lemon juice, salt, and pepper. Stir well to combine. Spoon salsa into a quart freezer bag. Place quart freezer bag into the gallon bag. Label gallon freezer bag and freeze. To serve: thaw in fridge. Remove tilapia from freezer bag and cover each side with blackening seasoning. Heat olive oil in a skillet on stovetop over medium heat. Cook tilapia in skillet for 3 minutes on each side until cooked through. Remove from heat and top with mango strawberry salsa.
