Ingredients
- 0.5 cups onion, chopped
- 1 pound extra lean hamburger meat
- 1 Tablespoon hamburger seasoning or for a GF, homemade version: Best Burger Seasoning
- 4 wedges spreadable cheese, queso fresco and Chipotle
- 2 Tablespoons ketchup
- 2 teaspoon yellow mustard
- 8 grape tomatoes, quartered (for serving day)
- 8 Iceberg lettuce leaves, washed and dried (for serving day)
- Non-stick cooking spray

Preparation
Step 1
Spray a skillet with nonstick spray and heat over medium heat. Add ground beef, onions and hamburger seasoning. Cook until meat is browned. Drain if necessary and return to skillet over heat. Add ketchup, mustard and cheese wedges. Stir to combine and melt cheese. Spoon 1/3 cup into each lettuce leaf and top with tomatoes. Roll and enjoy!
Freezing Directions:
Prepare ground beef mixture as directed above. Allow mixture to cool. Place into indicated number of gallon freezer bags. Label and freeze. TO SERVE: Thaw. Reheat on stovetop in a skillet or in microwave. Spoon 1/3 cup mixture into each lettuce leaf and top with chopped tomatoes. Roll and enjoy!
