French Carrot Salad

  • 2 tbsp fresh lemon juice
  • 1 tsp dijon mustard
  • 6 tbsp extra virgin olive oil
  • 10 oz shredded carrots
  • 1 tsp kosher salt
  • Pinch ground black pepper



Step 1

1. In a small bowl, whisk together lemon juice, dijon mustard and olive oil, salt and pepper
2. Stir and toss the dressing into the shredded carrots
3. Chill for 30 minutes before serving
