Ingredients

  • 2 # boneless beef chuck, trimmed of excess fat, cut into 1 1⁄2-in pieces
  • 6 clove(s)garlic, finely chopped
  • 1 (up to 2) jalapeño peppers (seeded, if desired), sliced
  • 1 large onion, chopped
  • 2 tablespoon(s)fresh lime juice, plus wedges for serving
  • 1 tablespoon(s)chili powder
  • Kosher salt
  • 1/4 # green beans, thinly sliced crosswise
  • 1 box(es) (10 oz) couscous
  • 1/2 cup(s) fresh basil, sliced

Preparation

Step 1

In a 5- to 6-qt slow cooker, combine the beef, garlic, jalapeños, onion, lime juice, chili powder and 1/2 tsp salt.

Cook, covered, until beef is very tender, 7 to 8 hours on low or 4 to 5 hours on high.

Stir in green beans, cover and cook for 3 minutes. Meanwhile, cook the couscous according to package directions. Spoon the beef, vegetables and sauce over the couscous and sprinkle with the basil; serve with the lime wedges, if desired.
